Quenelles bar
Macarons, pasta, Thai-in the box, choux à la crème (cream puffs)... the food business continues to specialize, mainly for cost reasons : less inventory, less waste, less need for multi-qualified chefs... I recently found new evidence of this trend at the marché Saint Germain: a Quenelle bar (by famous maker Giraudet). Quenelles are a typical dish from the Lyon region (south /center of France) coming in different varieties, the most famous being made from pike (brochet).

I'll have some of the macarons, pasta and cream puffs! LOL
ReplyDeleteFish dumplings? I don't know . . . On the other hand, I believe the sauce is made with crème fraiche, so how bad could they be?
ReplyDeleteWalleye pike and northern pike are the common game fish here. They can be good, but most people here roll the fish in breading and fry it and it tastes like salt, sort of like McFish. Yuck. On the last few fishing trips I went on, I introduced garlic, herbs, and roasting the fish in foil over the fire instead of frying them in grease. Most people loved it, some didn't.
ReplyDeleteFrankly, fish from the ocean is so much better than fresh water fish (except trout and salmon) that I don't even eat pike anymore.
And now for something completely different: est-ce que c'est possible que le pique-nique puisse etre en juillet?
Ah, heaven! Lyon is famous for this poached souffle-like delicacy served with a velvety cream sauce which is gently grilled before serving. Can't wait to sink my teeth into one!
ReplyDeleteFriday is fish day, isn't it ?
ReplyDeleteSo pike quenelles are perfect ;-)
Thanks, Eric!
Monday is fish day in my home :o) I love fish and all kinds of seafood.
ReplyDeleteThis summer I'm going to Bretagne/Brittany and I'm soo looking forward to all the seafood.

ReplyDeleteI'm totally trying to find a great recipe for macarons, but still searching. Can't wait to find a great rose one! (wish I could find them to buy here though...no luck, but I'll keep working on it!)
I love people who want to share their knowledge and do not keep them for themselves.
